Steps

  1. Coarsely grate the zucchini
  2. Mix with the vinegar
  3. Salt and sugar
  4. Leave this in a sieve
  5. You can line it with cheese cloth if you have it
  6. Cover and leave for an hour or so
  7. In your food-processor
  8. Process the parsley and chives until finely chopped
  9. Squeeze the zucchini to get as much moisture out as possible
  10. With just your hands or whilst in the cheese cloth
  11. Add the drained zucchini to the food-processor
  12. Process until smooth
  13. Then add the cream cheese
  14. Some salt and pepper to taste
  15. Process until it is well combined
  16. Put the pate in a small bowl
  17. Cover and put in the fridge for a few hours or overnight
  18. If you line the bowl with cling film you can turn it out of the bowl
  19. Peeling of the cling film
  20. Dust the pate with some paprika
  21. Then garnish with some thin cucumber slices around it
  22. But this is optional
  23. Serve with pita toasts
