  1. Preheat oven to 350f
  2. Butter a 1 and 1 / 2 quart baking dish
  3. Melt 1 / 2 the butter in a large skillet over medium high heat
  4. Saut zucchini in butter until tender
  5. About 3-4 minutes
  6. Drain
  7. Combine 1 cup parmesan cheese
  8. Mayonnaise
  9. Sour cream
  10. Onion
  11. Red pepper
  12. Eggs
  13. Salt and pepper
  14. Add the zucchini and toss gently to mix
  15. Pour into prepared baking dish and even the top
  16. Mix the bread crumbs with the parmesan cheese
  17. Melt the remaining butter
  18. Drizzle onto crumb mixture and toss to combine
  19. Sprinkle on the casserole
  20. Bake for 35 minutes
