  1. Preheat oven to 350f
  2. Wash zucchini
  3. Remove ends
  4. And slice into 1 / 3 inch coins
  5. Slice the onion very thinly
  6. Peel garlic
  7. Beat eggs in shallow bowl
  8. In a separate shallow bowl
  9. Combine flour
  10. Onion powder
  11. Garlic powder
  12. Paprika
  13. Basil
  14. Oregano
  15. Seasoning salt
  16. And bread crumbs
  17. Stir to mix well
  18. Dip sliced zucchini into egg mixture
  19. Then into flour mixture
  20. Heat olive oil in skillet and add whole garlic cloves
  21. As the garlic cloves become golden
  22. Crush them into the oil using a fork
  23. Remove garlic before it becomes brown
  24. Place zucchini in hot oil
  25. "dont overload the skillet as they should cook separated in the oil"
  26. Sprinkle a few slices of sliced onion over them
  27. Turn zucchini over as they become golden brown and cook the other side
  28. Remove zucchini and onions to a paper towel to drain
  29. Sprinkle with salt and pepper to taste
  30. Arrange zucchini on the bottom of a greased 8x8 baking dish
  31. Sprinkle a layer of parmesan cheese and a layer of mozzarella
  32. Then with a layer of tomato sauce
  33. Continue to make layers of zucchini
  34. Cheeses
  35. And sauce until all ingredients are used
  36. Ending with mozzarella
  37. Sprinkle with buttered bread crumbs
  38. If desired
  39. Bake uncovered at 350f for 25 minutes or until bubbly
  40. Let cool for a couple minutes before serving
