zucchini pancakes


this is a great vegetarian pancake, easy to make and is delicious. this recipe was passed to my mother over 100 years ago and has been a favorite of the families.

  1. Wash and shred zucchini on a fine shredder
  2. In a large mixing bowl
  3. Beat eggs
  4. Add shredded zucchini and mix well using a fork
  5. Add flour
  6. Sugar
  7. Salt and olive oil and stir well to blend
  8. Finally
  9. Add baking powder and mix using a spoon
  10. Preheat griddle to 425- 450f
  11. If using a heavy duty frying pan
  12. Heat to medium-high heat
  13. Adjust heat if necessary
  14. Rub grill or frying pan with oil before cooking each batch of pancakes
  15. Spoon batter onto hot griddle
  16. Cook until bubbles on the top of the pancake almost stop
  17. About 1 1 / 2 minutes
  18. Turn pancake over and continue to cook for another 1 to 1 1 / 2 minutes or until pancakes are done
  19. When done
  20. Rub pancakes with melted butter and place in a preheated 250 f oven to keep warm until the remainder are cooked
  21. Or serve immediately
  22. Serve with your choice of jams or syrups
  23. Also very good with sour cream or yogurt along with your choice of jams or syrups
  24. Or you can eat them just plain
  25. These pancakes are delicious for breakfast
  26. Brunch or just as a snack anytime
