  1. Preheat the oven to 350 degrees farenheit
  2. Melt butter with oil in a 12-inch ovenproof skillet over medium-high heat
  3. Add zucchini and onion
  4. And saut 12 to 14 minutes or until onion is tender
  5. Remove from heat and stir in 1 / 4 cup grated parmesan cheese
  6. Whisk together eggs with the milk
  7. Salt and pepper for least 1 minute
  8. Or until well blended
  9. Then pour over the vegetable mixture
  10. Bake for 13 to 15 minutes or until set
  11. Then
  12. Increase the oven temperature to broil
  13. And broil 5 1 / 2 inches from heat for 1 to 2 minutes or until the edges are lightly browned
  14. Sprinkle evenly with remaining 1 / 4 cup grated parmesan cheese and basil
  15. Garnish with the tomato if desired
