  1. Melt 1 tablespoon butter in a small skillet
  2. Add zucchini
  3. Onion
  4. And tomato
  5. Saute 2-3 minutes or just until tender
  6. Stir in salt and pepper to taste
  7. Set aside
  8. Combine eggs
  9. Water
  10. Remaining salt
  11. Basil
  12. Celery salt
  13. And remaining pepper
  14. Mix well
  15. Melt 2 tablespoons butter in a 10-inch skillet until just hot enough to sizzle a drop of water
  16. Pour in egg mixture
  17. As mixture starts to cook
  18. Gently lift edges of omelet
  19. And tilt pan to allow the uncooked portion to flow underneath
  20. When the mixture is set and no longer flows freely
  21. Sprinkle zucchini mixture on half of omelet and cheese on remaining half
  22. Fold omelet in half
  23. And place on a warm platter
