Steps

  1. Heat the olive oil in a large nonstick skillet coated with cooking spray over medium-high heat
  2. Add onion and garlic
  3. Saut for 1 minute
  4. Add zucchini
  5. Saut for 2 minutes or until lightly browned
  6. Remove from heat
  7. Stir in oregano
  8. Salt
  9. And pepper
  10. Wipe pan clean with paper towels
  11. And coat with cooking spray
  12. Heat pan over medium heat
  13. Add 1 tortilla to pan
  14. And sprinkle with 1 / 4 cup mozzarella
  15. Top with half of the zucchini mixture
  16. 1 / 4 cup tomato
  17. 2 tablespoons olives
  18. 2 tablespoons feta
  19. And 1 tortilla
  20. Cook for 3 minutes or until lightly browned on bottom
  21. Carefully turn quesadilla
  22. Cook for 2 minutes or until lightly browned
  23. Place quesadilla on a cutting board
  24. Cut in half using a serrated knife
  25. Repeat procedure with the remaining tortillas
  26. Mozzarella
  27. Zucchini mixture
  28. Tomato
  29. Olives
  30. And feta
  31. Serve warm
