Steps

  1. Grease 12 medium size muffin tin
  2. Preheat oven 400 degrees
  3. Mix dry ingredients together in large bowl
  4. Mix eggs
  5. Oil and shredded zucchini together and pour over dry ingredients
  6. Mix until moinstened
  7. Spoon batter into muffin tins
  8. Bake 25 minutes
  9. Cool on wire rack
  10. These freeze well
