delectable zucchini muffins with chocolate chips that are topped with a honey-orange glaze that make the muffins moist and lightly sweetened. perfect with a cup of coffee or tea and a great way to fool kids into eating zucchini. a special treat for both kids and adults. created for dining on a dollar cooking contest.

Steps

  1. Mix first five ingredients in a large bowl
  2. In another bowl
  3. Mix the egg
  4. Applesauce
  5. Milk
  6. Orange zest and vanilla
  7. Stir wet mixture into the dry ingredients until just moistened
  8. Fold in the zucchini and chocolate chips
  9. Spray non-stick muffin pans with cooking spray
  10. Evenly spoon batter into 12 muffin cups
  11. Bake at 350f for 20 minutes or until a toothpick inserted into center of muffin comes out clean
  12. Set on cooling rack
  13. While muffins are cooling
  14. Melt butter in a small microwaveable bowl
  15. Add honey
  16. Orange zest and orange juice to butter and microwave 10-30 seconds until the honey has liquified and mixture is easy to mix
  17. Poke holes in still warm muffins with a fork
  18. Evenly spoon glaze mixture over each muffin
  19. Let muffins cool completely
  20. Enjoy !
