zucchini molasses raisin bread

  1. Beat eggs in a large mixing bowl at medium speed until foamy
  2. Gradually add sugar
  3. Beating well
  4. Add oil and beat until blended
  5. Add the zucchini
  6. Molasses and vanilla
  7. Strirring well
  8. Combine flour and the next 7 ingredients until blended
  9. Add flour mixture to zucchini mixture and stir until well combined
  10. Add raisins and stir well
  11. Pour batter into 2 greased and floured 9x5x3 inch loafpans
  12. Bake at 350 for 55 to 60 minutes or until toothpick inserted in center comes out clean
  13. Let cool in pans 10 and then remove from pans and cool completely on wire racks
  14. Makes 2 loaves
