zucchini mock apple pie

  1. Preheat oven to 425 degrees
  2. Cook zucchini slices in boiling water until barely tender
  3. About 2 minutes
  4. Remove from stove and drain very well and cool
  5. Remove as much moisture as you can with paper towels
  6. In a bowl
  7. Toss zucchini with sugars
  8. Cinnamon
  9. Nutmeg
  10. Cardamom
  11. Cream of tartar
  12. Cornstarch or flour
  13. And salt until well coated
  14. Place lightly floured pastry in a 9-inch
  15. Pan
  16. Fill with zucchini mixture
  17. Dot with butter
  18. Drizzle with vinegar
  19. Top with crust
  20. Brush top crust lightly with water and sprinkle crust with sugar
  21. Bake for 15 minutes at 425
  22. Reduce heat to 350 and bake about 45 minutes
  23. Serve hot with a scoop of vanilla ice cream
  24. Or serve chilled
