  1. Wash zucchini and cut off ends
  2. But do not peel
  3. Grate zucchini into a bowl
  4. Sprinkle with 1 / 4 teaspoon salt and set aside for 10 minutes
  5. Drain or squeeze out the liquid
  6. In a large bowl: mix zucchini
  7. Eggs
  8. Sugar
  9. Baking powder
  10. Matzoh meal and 1 tablespoon oil and blend well
  11. Add salt to taste
  12. Heat oil in skillet: drop zucchini mixture by tablespoonfuls into pan
  13. Brown on both sides
  14. Serve with applesauce
  15. If desired
