when my mom was diagnosed with diabetes i searched for low-carb recipes and this was one of them i came up with. you'll never miss the pasta.

Steps

  1. Heat oven to 425 degrees
  2. Coat 2 baking sheets with nonstick cooking spray
  3. Cut each zucchini lengthwise in half
  4. Then cut each half lengthwise into 1 / 4 inch thick strips
  5. Spread on pans in a single layer
  6. Season with italian seasoning and 1 / 4 teaspoons each salt and pepper
  7. Bake 25 minutes
  8. Turning once halfway through
  9. Meanwhile
  10. In a large skillet
  11. Heat oil over medium-high heat
  12. Add turkey
  13. Cook
  14. Stirring to break up clumps
  15. Until no longer pink
  16. Stir in pasta sauce and 1 / 4 teaspoons each salt and pepper
  17. Cook 2 minutes
  18. Remove from heat
  19. Remove zucchini from oven and reduce heat to 375 degrees
  20. In a blender combine cottage cheese
  21. Remaining salt and pepper
  22. Basil
  23. Egg yolks and 2 tbs parmesan
  24. Pulse until all ingredients are blended and smooth
  25. Sprinkle 2 tbs bread crumbs in bottom of a 13x9x2 inch baking dish
  26. Top with half the zucchini
  27. Covering bottom of dish
  28. Spread cottage cheese mixture over zucchini
  29. Sprinkle with 3 tbs bread crumbs
  30. Top with remaining zucchini
  31. Sprinkle with 3 tbs bread crumbs
  32. Top with turkey mixture
  33. Spread mozzarella over turkey
  34. Sprinkle with remaining parmesan
  35. Bake at 375 degrees until cheese is browned and sides are bubbling
  36. About 35 minutes
  37. Let stand 10-15 minutes before serving
