zucchini lasagna


this is a lasagna that has no meat in it, just zucchini. it does use noodles too!! from everyday food.

  1. Prheat the oven to 425f
  2. Lightly oil an 8-inch baking dish and set aside
  3. In a medium bowl
  4. Stir together the cream cheese and ricotta
  5. Season with salt and pepper
  6. In another medium bowl
  7. Combine the zucchini
  8. Garlic
  9. And oregano
  10. Season with salt and pepper
  11. And toss to combine
  12. Spread 1 / 3 of the zucchini mixture in the prepared baking dish
  13. Top with 2 lasagna noodles
  14. Then 1 / 3 of the ricotta mixture
  15. Repeat twice with the remaining zucchini mixture
  16. Noodles
  17. And ricotta mixture
  18. Finishing with the ricotta mixture
  19. Sprinkle with the mozzarella cheese
  20. Cover the baking dish with aluminum foil and bake until bubbly and noodles are tender
  21. About 30-35 minute
  22. Remove the foil and bake until golden brown
  23. About 15-20 min more
  24. Let stand for 10 min before serving
