Steps

  1. Cut the zucchinis in lengths
  2. About 1cm broad
  3. Grind the pumpkin seeds and mix them well with flour
  4. Baking powder
  5. Salt
  6. Egg and yolk
  7. Slowly mix in the wine until the dough is smooth and has a batter consistency
  8. It might be more or less
  9. Let rest for 20 minutes
  10. Pour boiling hot water over the tomatoes and peel them
  11. Cut tomatoes in small pieces and put seeds away
  12. Chop onion and garlic and saut slightly in hot olive oil
  13. Add tomatoes and blend
  14. Spice with salt and pepper
  15. Cut basilca and mix under
  16. Heat the oil for frying to 180c
  17. Put each piece of zucchini through the dough and fry for 3 til 4 minutes on both sides until golden
  18. Serve with tomato ragout
  19. If you should not like tomatoes then this is also delicios with remoulade sauce
