  1. Combine the rice and water in a saucepan
  2. And bring to a boil
  3. Reduce heat to low
  4. Cover
  5. And simmer 20 minutes
  6. Until rice is tender
  7. Preheat oven to 350 degrees f
  8. Lightly grease a shallow 1 1 / 2 quart casserole dish
  9. Heat the oil in a skillet over medium heat
  10. And cook the zucchini
  11. Green onions
  12. And garlic 5 minutes
  13. Or until tender
  14. Season with garlic salt
  15. Basil
  16. Paprika
  17. And oregano
  18. Mix in the cooked rice
  19. Tomatoes
  20. And 1 cup cheese
  21. Continue to cook and stir until heated through
  22. Transfer to the prepared casserole dish
  23. Top with remaining cheese
  24. Bake uncovered 20 minutes
  25. Or until cheese is melted and bubbly
