zucchini heaven casserole

we like to call this summer in a dish at our house. it's not your usual zucchini casserole. it's a big hit at home and for potlucks. never any leftovers. this will be a summertime tradition at your house also. once you try it you're hooked!

Steps

  1. Rinse zucchini and squash
  2. Slice lengthwise and quarter
  3. Boil in salted water until just tender
  4. Drain and set aside
  5. In large nonstick skillet
  6. Saut chopped onion
  7. Green pepper
  8. And mushrooms in butter until tender
  9. Add diced tomatoes
  10. Flour and sugar
  11. Cook and stir about 3 minutes until slightly thickened
  12. Coat a 9 x 13-inch pan with cooking spray
  13. Add zucchini and squash
  14. Top with vegetable mixture
  15. Top with cheese
  16. Top with enough bread crumbs to cover with a medium thickness
  17. Dot with butter
  18. Bake at 350f until bubbly and golden brown
