zucchini garden chowder


this soup has a wonderful combination of vegetables. zucchini, tomatoes & corn in a cheesy base, i just love it! great cool weather dish. this recipe came from

  1. In a dutch oven or soup kettle over medium heat
  2. Saute zucchini
  3. Onion
  4. Parsley and basil in butter until vegetables are tender
  5. Stir in flour
  6. Salt and pepper
  7. Gradually stir in water
  8. Add the bouillon and lemon juice
  9. Mix well
  10. Bring to a boil
  11. Cook and stir for 2 minutes
  12. Add tomatoes
  13. Milk and corn
  14. Bring to a boil
  15. Reduce heat
  16. Cover and simmer for 5 minutes or until corn is tender
  17. Just before serving
  18. Stir in cheeses until melted
  19. Add sugar and garnish with parsley if desired
