Steps

  1. Saute the zucchini in the oil in an oven proof skillet until browned on all sides 3 minutes
  2. Combine eggs
  3. Parsley
  4. Thyme
  5. 2 tbsp of cheese salt& pepper
  6. Pour the egg mixture over the zucchini
  7. Cover and cook over medium heat until it is almost set
  8. Shake the pan a couple of times 5-10 minutes remove cover
  9. Sprinkle with remaining cheese
  10. Broil to brown the cheese 3-5 minutes
  11. Serve
