zucchini fiesta salad


this is a recipe that i adopted in the recipezaar recipe give-away of feb 2005 and made only a couple minor changes. i like it. preparation time does not include 30 minutes chilling time.

  1. Steam zucchini and crookneck squash over boiling water until crisp-tender
  2. Plunge into ice water to cool
  3. Drain well
  4. In a large bowl
  5. Combine lemon juice
  6. Oil
  7. Salt
  8. And cumin
  9. Add drained squash and stir lightly
  10. Chill for 30 minutes
  11. Add onion
  12. Chilies
  13. Olives
  14. And cheese
  15. Peel and pit avocado
  16. Cut into small cubes
  17. Add to salad and mix lightly
  18. To serve
  19. Arrange lettuce leaves on 4 salad plates
  20. Mound equal portions of salad on each plate
  21. Garnish each salad with a sprig of coriander
