zucchini doughnut puffs


a "secret" recipe that my aunt gave my mother in 1983. my aunt was the kind of person who was a good cook but would hide her recipes from other women. am guessing at how many puffs you might get from this. mom says this is really good and popular with her lady friends.

  1. Put oil into large frying pan and heat to 370 degrees
  2. In large bowl
  3. Beat eggs well
  4. Add both sugars
  5. Cream together thoroughly
  6. Add melted butter
  7. Milk
  8. Sherry
  9. Vanilla
  10. And zest
  11. Stir in zucchini into same bowl as above
  12. In a medium size bowl
  13. Stir together flour
  14. Baking powder
  15. Salt
  16. Cinnamon
  17. And nutmeg
  18. Stir dry ingredients into wet ingredients
  19. Take about a teaspoon of dough
  20. Gently drop it into hot oil
  21. And fry for about 1 minute per side
  22. Drain on paper toweling
  23. Make a thin glaze by combining powdered sugar with a tablespoon of orange juice and keep adding orange juice until you think it is right
