  1. Preheat oven to 350
  2. Lightly spray / grease a 13" x 9" baking dish
  3. Cook zucchini chunks in salted boiling water until tender
  4. About 5-7 minutes
  5. Drain
  6. Place hot drained zucchini chunks in a large bowl
  7. Add breadcrumbs
  8. Chopped tomato
  9. Salt
  10. Pepper and parsley
  11. Toss together well
  12. Pour into the prepared baking dish
  13. In a saucepan over medium heat
  14. Melt the butter
  15. Add the onion and garlic and saute until soft but not brown
  16. Stir in the flour
  17. Stirring constantly
  18. Gradually whisk in the milk and the cheese
  19. Heat
  20. Stirring frequently until the cheese is melted
  21. Evenly pour the sauce over the zucchini mixture in the baking dish
  22. Bake at 350 for 25-30 minutes
