another way to use up that zucchini, a nice different side dish, instead of potatoes. adapted from dreana ratcliffe in kootenay country kitchens cookbook.

  1. In a bowl
  2. Combine first 11 ingredients
  3. Mix well
  4. Stir in eggs
  5. Form into patties
  6. Fry in nonstick frypan
  7. Over medium heat for 10 minutes on each side
  8. Til lightly browned
