  1. Preheat oven to 375
  2. Using half the butter
  3. Grease a pie plate and coat with bread crumbs
  4. Heat olive oil in large skillet
  5. Add onion and garlic and saute for 10 minutes
  6. Add dice dtomatoes and saute another 5 minutes
  7. Raise heat to high
  8. Mix in zucchini
  9. Fennel seed
  10. And salt and pepper to taste
  11. Cook until zucchini is just tender
  12. Remove from heat and cool for five minutes
  13. Beat eggs
  14. Stir in milk
  15. Then add the cooled zucchini mixture to it
  16. Pour half the mixture into pie plate
  17. Layer all fo the swiss cheese
  18. Then pour on remaining vegetable mixture
  19. Sprinkle with parmesan
  20. Dab top with remaining butter
  21. Bake for 30 minutes
  22. Or until top is golden brown
  23. Let stand five minutes before serving
