simple and delicious! i can't remember exactly which magazine i got this from--i've had the recipe for so long, but i think it was parents, or parenting.

  1. Dry the bread in the oven for about 10 minutes
  2. While you preheat it to 350
  3. Remove bread from oven
  4. Halve garlic
  5. And rub each half onto a slice of bread
  6. Slice and chop zucchini and garlic
  7. And steam for 15 minutes
  8. Or until very tender
  9. Transfer to a bowl
  10. And mash well
  11. Add ricotta
  12. Salt and pepper
  13. And mash well again
  14. Spread over bread and bake 15 minutes
