zucchini cookies


a nice soft zucchini cookie that will remind you of zucchini bread!

  1. In a medium bowl
  2. Cream together the margarine and sugar until smooth
  3. Beat in the eggs then stir in the zucchini
  4. Combine the flour
  5. Baking soda
  6. Salt
  7. Cinnamon
  8. Cloves and nutmeg
  9. Stir into the zucchini mixture
  10. Cover dough and chill for at least 1 hour or overnight
  11. Preheat oven to 375 degrees f
  12. Grease cookie sheets
  13. Drop dough by teaspoonfuls onto the prepared cookie sheet
  14. Cookies should be about 2 inches apart
  15. Bake for 8 to 10 minutes in the preheated oven until set
  16. Allow cookies to cool slightly on the cookie sheets before removing to wire racks to cool completely
