zucchini cobbler


if you don't tell it is zucchini, people will think it is apple...i promise!

  1. In a large saucepan
  2. Over medium-low heat
  3. Cook and stir zucchini and lemon juice for 15-20 minutes or until zucchini is tender
  4. Add sugar
  5. Cinnamon and nutmeg
  6. Simmer one minute longer
  7. Remove from heat and set aside
  8. For crust
  9. Combine flour and sugar in a bowl
  10. Cut in butter until mixture resembles course crumbs
  11. Stir 1 / 2 cup into zucchini mixture
  12. Press half of remaining crust mixture into a greased 15x10x1-inch baking pan
  13. Spread zucchini mixture over top
  14. Crumble remaining crust mixture over zucchini
  15. Sprinkle with cinnamon
  16. Bake at 375f for 35-40 minutes or until golden and bubbly
  17. Top with ice cream or whipped cream to serve
  18. If desired
