black beans and rice with veggies

this is a modification of a simpler recipe i found online - i used less beans and added celery, carrots, and tomatoes, plus a few other mods. i'm just posting it so i can get the nutritional values of this version, but if someone else wants to use it, enjoy!

Steps

  1. In a large saucepan over medium heat
  2. Heat the oil
  3. Add the onion
  4. Garlic
  5. Celery
  6. And carrots
  7. And saute for 4-5 minutes
  8. Add the rice and saute for 2-3 minutes
  9. Add the vegetable broth and spices
  10. Bring to a boil
  11. Then cover
  12. Lower the heat
  13. And cook for about 25-30 minutes until the rice is cooked
  14. Stirring occasionally to prevent sticking
  15. "you may need to add stock if the rice isnt quite fully cooked"
  16. If so
  17. Add sparingly
  18. 1 / 4 cup at a time
  19. Add the black beans
  20. Stirring to mix
  21. Cook for 1-2 minutes more
  22. Until the beans are hot
  23. Then serve
  24. This would also be good if you add chopped red bell pepper to the veggie mix
  25. For a garnish
  26. Greek yogurt is a tasty substitute for sour cream
