this is the best tasting soup i have ever had. if you want a savory soup that is full of flavor and light on the calories, this is it! you'll never want regular potato soup again!

  1. In a large pot on medium-high heat add the ground sausage and crushed red pepper flakes
  2. Using a spatula
  3. Break up the sausage until it is fully cooked through
  4. Pour the cooked sausage into a large bowl and set aside
  5. In the same pot add the olive oil
  6. Chopped onion
  7. And real bacon pieces until the onions become translucent and begin to brown
  8. Add garlic and cook for an additional 3 minutes
  9. Add 2 cups of water to the pot and stir well to get all the sweet onion flavor from the bottom of the pan
  10. Add the chicken concentrate and stir to combine
  11. Add the remaining 8 cups of water
  12. Add potatoes and cook until fork tender
  13. You may wish to add more salt
  14. But be careful because the chicken base is very salty
  15. Taste for saltiness after each addition
  16. After the potatoes are done
  17. Add the cooked sausage back into the soup
  18. Skim off most of the fat from the sausage that floats onto the surface using a large spoon
  19. Add the fresh kale and stir in to allow the leaves to soften slightly
  20. It will seem like too much
  21. But it will cook down with time
  22. Reduce the heat to low and add the heavy cream
  23. Stir
  24. Add freshly ground black pepper
  25. If desired
  26. Garnish each serving with shredded parmesan or pecorino romano cheese
  27. If desired
