Steps

  1. Pat the pork loin dry
  2. Mix the food coloring with 2 tbsp water
  3. And rub the pork with this solution
  4. To prepare marinade
  5. Combine fish sauce
  6. Soy sauce
  7. Hoisin sauce
  8. Sherry
  9. Brown sugar
  10. Garlic
  11. Ginger
  12. Five spice
  13. And sesame oil in a blender and mix on high for about 30 seconds
  14. Marinate pork in a large ziplock bag or shallow dish
  15. Working marinade all over meat
  16. For at least 2 hours
  17. Turning meat occasionally
  18. Preheat oven to 450 degrees f
  19. Line a baking dish with heavy foil
  20. Place a meat rack in the dish
  21. Oil rack to prevent sticking
  22. Place roast on rack in dish and place in preheated oven
  23. After 15 minutes
  24. Reduce heat to 350 degrees f
  25. Meanwhile
  26. Place marinade in a small saucepan and bring to a boil
  27. Boil for 3-5 minutes
  28. Stirring constantly
  29. Add a little water if mixture becomes too thick
  30. Set aside
  31. Cook roast in preheated oven
  32. Checking with meat thermometer starting at about 30 minutes
  33. Basting at intervals with cooked marinade
  34. For a roast that is medium
  35. Go for 160 degrees
  36. For a roast that is well-done
  37. Go for 170 degrees
  38. When done
  39. Remove roast from heat and let it rest for 15 minutes
  40. Thinly slice roast into 1 / 4" medallions
  41. And place on a large platter
  42. Garnish with cilantro leaves
  43. Serve with hot steamed rice
