  1. Place 1 / 4 cup warm water in small bowl
  2. Sprinkle yeast over
  3. Stir to dissolve
  4. Let stand 5 minutes
  5. Combine remaining 2 cups warm water
  6. 1 cup all purpose flour and 1 cup rye flour in bowl
  7. Add yeast mixture
  8. Mix to blend well
  9. Cover bowl with kitchen towel
  10. Let sponge rise 1 hour
  11. Mix sugar
  12. Corn syrup
  13. Shortening
  14. Aniseed
  15. Coriander
  16. Orange peel and salt into sponge
  17. Gradually mix in enough all purpose flour
  18. 1 / 2 cup at a time
  19. To form slightly sticky dough
  20. Knead on floured surface until smooth and elastic
  21. Adding more flour if sticky
  22. About 10 minutes
  23. Lightly oil large bowl
  24. Add dough
  25. Turning to coat entire surface
  26. Cover bowl with kitchen towel
  27. Let dough rise in warm draft-free area until doubled in volume
  28. About 1 hour
  29. Grease 2 cookie sheets
  30. Punch dough down
  31. Turn out onto lightly floured surface and knead until smooth
  32. Divide dough into 3 parts
  33. Pat each piece into 5-inch-diameter round
  34. Place on prepared sheets
  35. Cover and let rise in warm draft-free area until almost doubled
  36. About 40 minutes
  37. Preheat oven to 350f pierce each loaf 5 times with fork
  38. Bake until loaves are brown and sound hollow when tapped on bottom
  39. About 1 hour
  40. Transfer to racks
  41. Brush with butter and cool
  42. Serve warm or at room temperature
