Steps

  1. Fry bacon in heavy skillet until crisp
  2. Remove to warm plate
  3. Pour off all but 1 tbs
  4. Bacon fat
  5. Peel and coarsely grate potatoes
  6. Place in paper towel and squeeze out excess moisture
  7. Whisk together milk
  8. Egg
  9. Flour and salt
  10. Fold grated potatoes into batter
  11. Heat pan to medium high
  12. Using a 1 / 3 cup measuring cup
  13. Transfer batter to pan
  14. Flatten each pancake to 3" diameter
  15. Fry a few minutes on each side until golden
  16. Transfer to platter in a warm oven until all are ready
  17. Serve with the bacon and lingonberries
  18. If available !
