swedish pancakes plttar


posted for the zaar world tour-sweden. from the "best of international cooking" cookbook. i haven't tried this recipe yet. these are traditionally served with stewed fruit, lingonberry jam and sour cream.

  • Carbohydrates: 272.2

  1. In a medium bowl
  2. Beat eggs
  3. Stir in milk and half and half
  4. In another bowl
  5. Stir together flour
  6. Baking powder
  7. Sugar and salt
  8. Sprinkle over egg mixture
  9. Gently stir in until batter is smooth
  10. Stir in butter
  11. Let stand 1 hour
  12. Stir batter thoroughly
  13. Preheat a plttar pan or 6-inch cast-iron skillet
  14. Grease cups of plttar pan or grease skillet
  15. Spoon 2 rounded tablespoons batter into each cup or onto skillet
  16. Cook about 1 minute on each side until golden brown
  17. Repeat with remaining batter
  18. Serve with fruit or jam
  19. Variation: make 8-inch pancakes
  20. Layer several pancakes with thick lingonberry
  21. Bilberry or blackberry jam between them
  22. When cool
  23. Frost stack with whipped cream
