my husband is of norse heritage - a danish father, and swedish mother. when they were still among us, his mom would make a buffet of all the classic stuff-swedish meatballs,swedish potato sausage,

  1. In a large skillet
  2. Melt butter over medium heat
  3. Add mushrooms and 1 / 4 tsp
  4. Salt
  5. Cook
  6. Stirring often
  7. Until mushrooms have given off their liquid
  8. And are slightly browned
  9. About 6 minutes
  10. Transfer mushrooms to a plate and set aside in a medium bowl
  11. Combine rye cracker crumbs or bread crumbs
  12. 1 / 4 cup cream
  13. Egg
  14. Onion
  15. Parsley
  16. Remining 1 / 2 tsp
  17. Salt
  18. Allspice
  19. Nutmeg
  20. And 1 / 8 tsp
  21. Pepper
  22. Stir with a fork until mixed
  23. Add ground round and mix until well blended
  24. Using about a tablespoon of mixture for each
  25. Form into meatballs
  26. In a large skillet
  27. Heat oil over medium-high heat
  28. Add meatballs and cook
  29. Turnng occasionally
  30. Until browned all over
  31. About 10 minutes a batch
  32. Sprinkle flour over meatballs and gently turn them until the coated flour is absorbed
  33. Add broth and 3 / 4 cup of water
  34. Bring to a simmer
  35. Scraping up browned bits from the bottom of the pan with a wooden spoon
  36. Reduce heat to low
  37. Cover and simmer 5 minutes
  38. Gently stir in cooked mushrooms
  39. Remaining 1 / 4 cup of heavy cream
  40. And 1 / 8 tsp
  41. Of pepper cook until heated through
  42. About 3 minutes
  43. Serve on cooked egg noodles
