  1. Put bread crumbs and milk in large bowl
  2. Stir
  3. Soak 10 minutes
  4. Add onion
  5. Eggs
  6. Allspice
  7. Nutmeg and pepper
  8. Use wooden spoon to combine
  9. Break meats into small bits with your hands
  10. Add to bowl
  11. Use wooden spoon to beat until mixture is well-mixed
  12. Shape into 1 1 / 4-inch balls
  13. Handle gently and rinse hands often in water to keep mixture from sticking
  14. (easiest way to make them is to use small 1 1 / 4-inch diameter ice cream scoop
  15. Then gently shape with moistened hands
  16. Alternately
  17. Use tablespoon and moistened hands to shape mixture into balls
  18. )
  19. Arrange meatballs in single layer on lightly oiled baking sheet
  20. Refrigerate until firm
  21. About 2 hours
  22. Heat 1 tablespoon butter and 1 tablespoon oil in 12-inch nonstick skillet over medium-high heat
  23. Add meatballs in batches
  24. Without crowding
  25. Cook until browned
  26. Shaking pan occasionally
  27. About 5 minutes
  28. Transfer to wide
  29. Shallow
  30. Oven-to-table casserole
  31. Repeat with remaining meatballs
  32. Adding more butter and oil as needed
  33. Reserve hot skillet
  34. Unwashed
  35. For making gravy
  36. Add onion to reserved skillet
  37. Cook over medium heat until softened
  38. Stirring often
  39. About 4 minutes
  40. Add flour
  41. Cook 1 minute
  42. Stir in consomme
  43. Stir until thickened
  44. About 4 minutes
  45. Add cream
  46. Stir until hot
  47. Taste and season with salt and pepper
  48. Strain gravy and pour over meatballs
  49. Cover casserole with lid or foil
  50. Bake at 300 degrees
  51. Shaking several times to shift meatballs
  52. Until just heated through
  53. About 45 minutes
  54. Cool 20 minutes
  55. Use slotted spoon to set meatballs aside
  56. Skim fat from gravy
  57. Put meatballs back in gravy
  58. Reheat at 300 degrees until hot
  59. 10 to 20 minutes
  60. Serve hot
  61. Spooned over dilled noodles
  62. Pass lingonberry preserves separately
