  1. Preheat oven to 200 degrees f
  2. Tear the bread into pieces and place in a small mixing bowl along with the milk
  3. Set aside
  4. In a 12-inch straight sided saute pan over medium heat
  5. Melt 1 tablespoon of the butter
  6. Add the onion and a pinch of salt and sweat until the onions are soft
  7. Remove from the heat and set aside
  8. In the bowl of a stand mixer
  9. Combine the bread and milk mixture
  10. Ground chuck
  11. Pork
  12. Egg yolks
  13. 1 teaspoon of kosher salt
  14. Black pepper
  15. Allspice
  16. Nutmeg
  17. And onions
  18. Beat on medium speed for 1 to 2 minutes
  19. Using a scale
  20. Weigh meatballs into 1-ounce portions and place on a sheet pan
  21. Using your hands
  22. Shape the meatballs into rounds
  23. Heat the remaining butter in the saute pan over medium-low heat
  24. Or in an electric skillet set to 250 degrees f
  25. Add the meatballs and saute until golden brown on all sides
  26. About 7 to 10 minutes
  27. Remove the meatballs to an ovenproof dish using a slotted spoon and place in the warmed oven
  28. Once all of the meatballs are cooked
  29. Decrease the heat to low and add the flour to the pan or skillet
  30. Whisk until lightly browned
  31. Approximately 1 to 2 minutes
  32. Gradually add the beef stock and whisk until sauce begins to thicken
  33. Add the cream and continue to cook until the gravy reaches the desired consistency
  34. Remove the meatballs from the oven
  35. Cover with the gravy and serve
