  1. In a saucepan
  2. Combine cream and 1 cup sugar
  3. Cook and stir constantly over low heat until candy thermometer reads 160 or steam rises from pan
  4. Stir in gelatin until dissolved
  5. Add extracts
  6. Cool 10 minutes
  7. Whisk in sour cream
  8. Pour into eight dessert glasses or small bowls
  9. Chill at least 1 hour
  10. Before serving
  11. Combine raspberries and remaining sugar
  12. Spoon over each serving
