  1. Boil whole
  2. Unpeeled potatoes in unsalted water until fork-tender
  3. Remove and allow to sit until cool enough to touch
  4. Peel potatoes
  5. Then chop into 1 dice
  6. In a saucepan over medium-high heat
  7. Stir together butter and flour to make a light roux
  8. But do not allow to darken
  9. Add cream
  10. Salt
  11. And pepper and whisk steadily until incorporated and thickened into a cream sauce
  12. About 5 minutes
  13. Stir in potatoes
  14. Turn heat to medium-low
  15. And allow potatoes to stew just until warmed
  16. Garnish with chopped dill and serve
