  1. Whisk the flour
  2. Cardamom
  3. And salt in a bowl
  4. "put the butter and confectioners sugar in a food processor
  5. And process until smooth"
  6. Pulse in the egg
  7. Vanilla
  8. And lemon zest until combined
  9. Add the flour mixture and process to make a soft buttery dough
  10. Divide dough in half onto 2 sheets of plastic wrap
  11. Using the plastic
  12. Shape into rough logs
  13. Refrigerate the dough logs for 30 minutes until just firm enough to shape into uniform logs
  14. 8-inches long by 2-inches in diameter
  15. Refrigerate until firm
  16. At least 2 hours or overnight
  17. Preheat oven to 325 degrees f
  18. Scatter either the sanding sugars or toasted nuts on a work surface and roll the logs until completely coated
  19. Cut into 1 / 4-inch thick cookies and space about 1 inch apart on parchment-lined baking sheets
  20. Bake until golden around the edges
  21. About 20 to 25 minutes
  22. Cool cookies on the pan on wire racks
  23. Store in an airtight container at room temperature for up to 2 weeks
