  1. Grease a large bowl
  2. Set aside
  3. In a large mixing bowl
  4. Dissolve yeast in water with sugar
  5. Let stand until foamy
  6. About 5 minutes
  7. Stir honey
  8. Sugar
  9. And salt into scalded milk
  10. Cool to lukewarm
  11. Add milk mixture and 2 cups flour to dissolved yeast
  12. Beat until smooth
  13. Add butter
  14. Eggs
  15. Cardamom
  16. And raisins
  17. Beating until thoroughly blended
  18. Stir in enough remaining flour to make a soft dough
  19. Turn out onto a well floured board
  20. Knead 8 to 10 minutes until smooth and elastic
  21. Place in prepared bowl
  22. Grease top lightly
  23. Cover
  24. Let rise in a warm
  25. Draft-free place until doubled
  26. About 1 hour
  27. Spray a large baking sheet with non-stick vegetable spray
  28. Punch dough down
  29. Knead briefly
  30. Divide dough into 6 equal pieces
  31. Roll each piece into a 14-inch rope
  32. Place 3 ropes side-by-side and braid
  33. Pinching ends together to seal
  34. Place on prepared baking sheet
  35. Repeat with remaining 3 ropes
  36. Grease tops lightly
  37. Cover
  38. Let rise until doubled
  39. About 1 hour
  40. Preheat oven to 350f
  41. Combine egg white and water
  42. Whisk
  43. Brush tops of loaves with mixture
  44. Bake 35 to 50 minutes or until loaves are a deep golden brown and tester inserted in center comes out clean
  45. Carefully remove from baking sheet
  46. Cool completely on a wire rack
