swedish apple cake


this is a favorite cake in sweden. it's a simple, buttery cake filled with cinnamon-sugar apple slices. it reminds me of a pound cake, but with a yummy apple cinnamon topping. the presentation is made really pretty by arranging the apple slices. you can serve this as a coffee cake or as a dessert. you can re-heat slices in the microwave if you like it warmed. recipe from epicurious.

  1. Preheat oven to 350f grease and flour pan
  2. Preferably an 8-inch or 9-inch spring form pan
  3. Sift together flour and baking powder
  4. Set aside
  5. In a medium-sized mixing bowl beat butter until light
  6. Gradually beat in sugar until fluffy
  7. Beat in first egg
  8. Then second egg
  9. Beat in cup of flour mixture
  10. Then third egg
  11. Slowly mix in remaining flour mixture
  12. Alternating with the cup of milk or water
  13. Pour into prepared pan and smooth top
  14. Peel apples
  15. Core and cut each into 6 to 8 wedges
  16. Mix the cup sugar with cinnamon
  17. Roll apple wedges in cinnamon sugar and press wedges into cake batter all over the entire cake
  18. Sprinkle any remaining cinnamon sugar over the top of the cake
  19. And if desired strew a few slivered almonds over the top
  20. Bake approximately 1 1 hours
  21. More or less
  22. Depending on pan size
  23. Until cake tests done when a cake tester is inserted in the center of the cake
  24. Cool briefly
  25. Then remove from pan
