  1. Knead almond paste until soft
  2. Work in powdered sugar
  3. Add vanilla and salt
  4. Add egg whites
  5. A little at a time
  6. Blending well after each addition
  7. Use just enough egg whites to make a soft dough that will hold its shape when dropped from a teaspoon
  8. Line cookie sheets with unglazed brown paper
  9. Drop paste onto sheets by teaspoonfuls
  10. About 2 inches apart
  11. Or force through a cookie press into rounds
  12. Sprinkle with sugar
  13. Bake about 20 minutes at 300 degrees
  14. Place macaroons on damp towel to loosen the brown paper and remove paper
  15. Cool on racks
