  1. Place the butter and icing sugar in a food processor
  2. And process until smooth
  3. Pulse in the egg
  4. Vanilla
  5. Cardamom and zest until combined
  6. Add the flour and process to make a soft dough
  7. Divide dough in half
  8. Place onto two sheets of plastic wrap
  9. Using the plastic
  10. Shape into 8-inches long by 2-inches in diameter logs
  11. Refrigerate the dough logs for 2 hours or overnight
  12. Preheat oven to 325 degrees f
  13. Scatter either the coloured sugars or toasted nuts on a work surface and roll the logs until completely coated
  14. Cut into 1 / 4-inch thick cookies and space about 1 inch apart on parchment-lined baking sheets
  15. Bake until golden around the edges
  16. About 20 to 25 minutes
  17. Cool cookies on the pan
  18. Remove to airtight container
