my "mystery scallops" have appeared! (i thought i lost this recipe for a bit!!!) karen says i'm a crazy woman mixing the morgan with the habaneros. i always knew i was crazy, but this is good!

  1. Heat butter in a large skillet and add garlic
  2. Cook until fragrant
  3. Add red bell peppers and habanero chiles
  4. And cook
  5. Stirring
  6. About 3 minutes
  7. Pour pineapple chunks into the pan
  8. And add the scallops
  9. The juice of 1 / 2 a lime
  10. And the salt and pepper
  11. Cook
  12. Stirring for 4 minutes
  13. "add coconut extract and captain morgans spiced rum to the pan"
  14. Cook 1-2 minutes to blend flavors
  15. Mix cornstarch with water in a small dish
  16. Add to pan and stir well
  17. Cook just until mixture has thickened
  18. Serve over hot steamed rice
