good use for leftover chicken or turkey. can also sub canned chicken in this. the sauce has a bit of a kick from the chipotles. use more or less to your taste.

  1. Preheat oven to 350 degrees
  2. Spray a 9 x 13" pan with cooking spray and set aside
  3. Mix together sauce ingredients and refrigerate until needed
  4. Wash bell peppers
  5. Cut in half lengthwise and remove seeds
  6. Place peppers in a microwaveable dish and add about 1 / 4" of water
  7. Microwave for about 3 minutes or until they just start to soften
  8. Remove from microwave & pat dry with paper towels
  9. Place in prepared 13 x 9 pan
  10. Set aside
  11. To make filling:
  12. Mix together the cumin
  13. Garlic powder
  14. Salt
  15. Pepper
  16. Rice
  17. Chicken
  18. Salsa
  19. Black beans
  20. Corn
  21. Onions and cheese
  22. Fill the peppers
  23. Mounding the stuffing slightly
  24. Bake uncovered for about 30 minutes or until filling is hot and the peppers are tender
  25. Drizzle with the sauce and serve
