i adopted this recipe from the recipezaar account in february 2005. when i finally had time to try it, i made a few changes to the recipe. i wasn't successful in forming the rice "log" around the veggies as described in the original instructions, and instead just spread the rice over the cream cheese layer and added strips of cucumber and red pepper as i rolled it up. it wasn't exactly sushi form, but it was still pretty and very tasty.

Steps

  1. In medium bowl
  2. Combine cooked rice and vinegar
  3. Mix well
  4. Cover
  5. Refrigerate 30 minutes or until cold
  6. In small bowl
  7. Combine cream cheese and wasabi paste
  8. Mix well
  9. Place each tortilla on 12-inch square of plastic wrap
  10. Spread about 2 tablespoons cream cheese mixture over each tortilla
  11. Spreading to edges
  12. Spoon about 1 / 3 cup cold rice mixture across center of each tortilla
  13. Press firmly into strip about 2-inches wide
  14. Quarter cucumber lengthwise
  15. Reserve 3 sections for another use
  16. Remove seeds from cucumber quarter
  17. Cut into 3 thin lengthwise strips
  18. Press 1 strip into center of each rice strip
  19. Cut pepper into thin strips
  20. Place next to cucumber to form long red stripe
  21. On each tortilla
  22. Mound another 1 / 3 cup rice mixture over cucumber and pepper
  23. With wet hands
  24. Form rice into firm rolls
  25. Completely covering cucumber and pepper
  26. Beginning at bottom edge
  27. Roll each tortilla firmly around rice
  28. Wrap each roll securely in plastic wrap
  29. Refrigerate 4 hours or until well chilled
  30. To serve
  31. Trim uneven ends
  32. Cut each roll into eight 3 / 4-inch-thick slices
