  1. Add the vinegar and sugar to the rice
  2. And mix well
  3. The purpose in this is not just to mix the flavors into the rice
  4. But also to cool the rice just a little bit
  5. Soften each leaf of lettuce by dipping it into boiling water for just a few seconds
  6. Until it can be easily rolled
  7. Remove the lettuce from the water with tongs
  8. And place flat
  9. Internal side down
  10. On a kitchen towel to drain
  11. Place about 2 tablespoons of rice in the center of each leaf
  12. Top with a cucumber strip and with a carrot strip
  13. Fold the sides of the leaf over the rice
  14. And then roll the ends up over the filling to form a tight and compact bundle
  15. Continue with the other 7 lettuce leaves
  16. Making 8"sushi" bundles in all
  17. Place in a single layer on a dish and chill until serving time
  18. Allow at leave 15 minutes chilling time
