  1. Grease 14 muffin tins
  2. Preheat oven to 200c
  3. Prick tomatoes in several places with a skewer to prevent them from bursting during cooking
  4. Sift flour & add zucchini & cheese
  5. Beat egg
  6. Oil & milk together until combined
  7. Add liquid to flour & stir until smooth
  8. Place one tablespoon of mixture in each muffin tin
  9. Press a cherry tomato into each mix
  10. Fill tins with more mix
  11. Covering each tomato completely
  12. Bake in oven for about 20 minutes until golden
