  1. Make the surprise pi symbols:
  2. Preheat oven to 350 degrees f
  3. Spray a sheet pan with nonstick spray and line bottom with parchment paper
  4. Prepare the two boxes of cake mix according to package instructions
  5. Then divide the batter into five bowls
  6. Fold in about 6-7 drops of gel food coloring to each bowl
  7. So that you have five separate colors
  8. Transfer to piping bags
  9. Pipe batter in alternating colors into prepared sheet pan
  10. Tap the sheet pan on the counter several times to even batter and eliminate any air bubbles
  11. Bake for 20-25 minutes
  12. Or until toothpick comes out clean
  13. Let cool
  14. Then freeze until solid
  15. Invert frozen sheet cake onto a cutting board and peel off parchment paper
  16. Cut pi symbols with cutter and transfer to a parchment-lined baking sheet
  17. Set aside in freezer
  18. Make the lemon pound cake:
  19. Preheat oven to 350 degrees f
  20. Grease and flour a loaf pan
  21. Whisk together flour
  22. Baking powder
  23. And salt in a medium bowl and set aside
  24. In a bowl of a standing mixer fitted with a paddle attachment
  25. Beat butter and sugar until light and fluffy
  26. Add eggs one at a time
  27. Beating well after each addition
  28. Add lemon juice
  29. Zest
  30. And extracts
  31. Beat until combined
  32. Add flour mixture and milk
  33. Alternating in two batches
  34. Beating until combined
  35. Transfer batter to a large piping bag
  36. Bake the cake:
  37. Pipe and spread a thin layer of batter into the bottom of the prepared loaf pan
  38. Stack three of the frozen pi cakes and position upside down into one side of the loaf pan
  39. Leaving a small space on the short side
  40. Repeat with three more frozen pi cakes
  41. Positioning on the other side of the loaf pan
  42. You should be able to fit six pi symbols inside
  43. Pipe the rest of the batter into the loaf pan
  44. Making sure to get batter into all the crevices
  45. Smooth top with a spatula
  46. Place the loaf pan on a parchment-lined baking sheet and mark which side is the front of the pi symbol
