Steps

  1. Heat oven to 400f grease bottoms only of 12 regular-size muffin cups with spray
  2. Or line with paper baking cups
  3. In small bowl
  4. Mix all filling ingredients until smooth
  5. Set aside
  6. In large bowl
  7. Beat milk
  8. Oil and egg with fork or wire whisk
  9. Stir in remaining muffin ingredients just until flour is moistened
  10. Divide batter evenly among muffin cups
  11. Place about 1 rounded teaspoon filling on batter in each muffin cup
  12. Top with remaining batter
  13. Bake 20 to 25 minutes or until golden brown
  14. Immediately remove from pan to cooling rack
  15. Cool 5 minutes
  16. Serve warm or cool
